With the abundance of cherries at our fingertips flavors and combinations are being tested and sampled. One hot from the idea mill is slow cooked cherry-miso condiment. The cherries are cooked with vidalia onion for several hours and then pureed with miso to add a salinity and rounded flavor. The uses are many from a marinade, vinaigrette, light froth and bbq sauce base.
