Well, we hit the ground running this morning. Lots of issues, very few of which are food/beverage related. Pink frette sheets (that used to be white), scheduling issues (good staff is hard to find), computer issues (can't do payroll if the time clock refuses to give up people's hours), mysterious piles of laundry that a housekeeper just decided to hide instead of washing... and it's not even 9am yet. Alex just brought me to my first cup of coffee and I'm taking a minute to make us some breakfast which we'll snatch bites of as we run back and forth. Just can't do Monday on an empty stomach...so here it is: mini casseroles of ham, eggs and gruyere eaten with toast or a bagel quickly toasted on the grill. Easy enough with a good pantry and you can throw it under the broiler and pull it out the next time you run by. Quick, easy and yummy. Sustenance for a busy day.
