We have spent the past week working on an interesting sauce based on concord grapes and chipotle hot sauce. My first attempt yielded a good sauce, more hot than grape. I was able to get my hands on a good supply of concord grapes and have since adjusted the balance in the sauce bringing the grape forward and allowing the chipotle to frame the sauce. We were able to add a bit of viscosity to the sauce with fresh mango, though its role is minute. The completion of the sauce has sparked several new dishes which we will fine tune over the next few days and weeks.
