I have finally gotten around to going through some of my notes and realized I had yet to post the recipe for rhubarb ribbons. Here it is.
450g rhubarb slice
88g liquid glucose
Cook all the ingredients together until the rhubarb is falling apart. Puree the mixture in the blender and then strain through a fine conical sieve. Cool the mixture in a metal bowl over an ice bath and then let the mixture rest for at least an hour in the refrigerator. Use a template to shape the rhubarb mixture on a silpat and then bake at 200 degrees F for a half an hour or until the rhubarb is completely dry. Remove the rhubarb from the silpat and shape the strips into ribbons and then let cool. The rhubarb will hold its shape.
