Today we began with a thought and now have a new ingredient. Our hikes in the woods are pretty fruitful for ideas. Aki and I have talked about using acorns in our dishes though we just have not gotten around to it. Today I was out with the dogs and decided to fill my pockets with acorns. I should mention that yesterday I peeled and ate a raw green acorn and was reintroduced to what tannin is. When I returned from the walk I brought the acorns in and blanched them in milk several times. When the acorns were cool, I began to peel them. They are pretty amazing. Small nutty morsels with a woody background. Now begins another quest to figure out a means to highlight these treasures from the trees.
