This morning we began work on a number of new dishes, ideas for the fall. I continued with the some earlier thoughts which sprang from the process of making a pistachio sugar in hopes of making a pistachio cotton candy. The cotton candy would be a delicate sweet and salty topping for something. I wanted to play off the sugar filaments with some crunch so we made a fresh relish of apple and jalapeno. The combination of the pistachio sugar and the relish is quite tasty. A few sprouts of cumin rounded out this initial trial with pistachio cotton candy. We have some work to do, though I like the direction this dish is going.
