      What's Underneath

      ScalloptartareedamamepecorinosavoryToday we revisited the mosaic of pounded pecorino and edamame.  This time we used it to both hide and season a scallop tartare.  We topped the mosaic with summer savory and Aleppo pepper.  Just a fun dish with a bit of surprise.
