I am a huge fan of pulled pork. There's something about this texture that has always fascinated me and I'm happy to eat it at every opportunity. Another favorite from our local Chinese delivery place is Moo Shu Pork and while the meat is not shredded in this instance, it is cut in thin slivers and tossed with mushrooms and other thinly sliced vegetables for a very similar, albeit smoother, textural experience. Both dishes are highly seasoned with a flavorful sauce coating the meat. When we found these beautiful King Trumpet Mushrooms the other day I had pulled pork on the brain and began wondering if we could "pull" the mushrooms. The short answer is yes we can and here are the results. Pulled King Trumpet mushrooms tossed in a rich barbecue sauce. They are utterly delicious simply served with a bit of steamed rice and a poached egg, the next challenge is to see what other interesting pairings we can come up with.
