King Crab Leg lime leaf-carrots, butter pecan, tarragon
Dishes are sometimes born of ingredients rather than as the result of a well thought out plan. We were working on carrot cookery and flavorings and ended up with lime leaf infused carrots which screamed for seafood. We also had some butter pecan disks on hand, an element of richness which could add fat to the light carrots. The flavor of soil and sweetness in carrots pairs quite well with the salinity and sweetness of crab. The inclusion of the pecans and some slices of tarragon round out the whole flavor profile. This was not a planned dish. In analyzing the components we could not have planned the dish any better. What is important is that despite the best laid plans often times ingredients come together because they want to and they can, you just have to give them a chance.
