There is a reason why the diner pairing of pie and coffee is a cliche. It is because the combination works so well. We have been working on new ways to get the flavors we want into a variety of mediums. We decided to turn our pie and ice cream inside out and upside down. Think apple pie ice cream, coffee flavored cake and loose streusel topping. Aki complained that the ice cream eclipsed the cake, to which I responded that in any self respecting diner the pie is always better than the coffee, although where we come from pie without coffee just doesn't work.
