With the Feast of the Seven Fish Heads looming it only seemed appropriate to pull out the pasta machine. To keep with our theme, we made an intense lobster stock with the lobster heads. We combined the stock with lobster roe and chicken eggs to make the liquid base for our noodles. With the addition of semolina and the help of our pasta extruder we quickly had lobster noodles. Now comes the more difficult part, figuring out how to serve them.
