We blended equal parts by weight of powdered green chiles and powdered white miso. The blend of delicate heat and tar like undertones of the chiles with the salty richness of the miso combined to create a seasoning greater than the sum of its parts. Initially these dried seasonings were destined to continue fueling my pasta fettish. Still, there is only so much pasta I can eat and many more ideas and dishes to explore: curing madai, seasoning root vegetables, folded into pie and other doughs, blended into butters and fats.
