We are often looking for an ingredient to be perfectly ripe. However, the extreme conditions of ingredients from underripe to overripe are where the exceptional and unique flavors come from. Sure, the perfectly ripe peach may be amazing but the crisp acidity of a green mango stands out amidst our taste memories. And while we use fruits as our example, all ingredients travel this path from meat to fish to vegetables to cheese. It just takes patience and curiousity to discover these ingredients on the edge.
