We make our XO butter by blending 1 part XO sauce with 2 parts softened butter. When the butter was combined we refrigerated it to let the flavors combine. With the butter made, we trimmed the peas and then cooked them in the XO butter. We then served them hot with a spoonful of rich yogurt enriched with a bit of Knob Creek bourbon. The combination of these few elements produced an incredibly satisfying dish.
