We've got a new piece up over at PopSci about blast chillers. We've been working with one in our kitchen for the last six months or so an we've been impressed by the number of different ways it has come in handy. We're always looking for new tips so if you have any great uses that we haven't thought of please leave a comment below.
We've got a few upcoming events that we waned to mention. We'll be at El Ideas in Chicago teaching classes on June 24-25 and doing a guest chef dinner with Phillip Foss on Tuesday, June 26, 2012. We will be doing a guest chef dinner with George Mendes at Aldea in New York CIty on July 15, 2012.
