We started work on yeast cakes. These ones are leavened with yeast and a touch of baking powder. The dried fruit inclusions are soaked in rum. The baked cakes are dipped in brown butter and dusted with powdered sugar. The nutty rich notes of the brown butter add an incredible aroma and flavor to the cakes. It has us looking at infusing brown butter and other fats for dipping and flavoring cakes and more.
