We finally have our pickle pot in balance. Trial by error helped us focus on the process. It allowed us to understand the happenings of the pickle pot. It enabled us to search for what we wanted as a result. We left these leeks buried for 2 days. The outer layer is still salty. When we remove it the inside is a balanced pickle. The acidity is bright. The leeks are crisp. The allium notes are tamed. The pickles are building blocks. And they are equally delicious sliced and savored.
