A cheesecake brownie does not always have the aesthetic we are looking for in a composed dish. Still the flavors are amazing. So we vacuum seal and roll the brownies into sheets. Then we freeze them and can cut them into stylized shapes to integrate into a dish. What was exciting was that as we worked with the flattened cheesecake brownie, we saw the opportunity to re-imagine how we build ice cream sandwiches. Now we have the ability to coat or layer sheets of brownie, and other mashable sweets into the sandwich. And the slightly moist texture of the brownie acts as a wonderful glue for crumbs or to be dipped or sprayed with chocolate.
Changing the shape altered the experience and expanded the possibilities.
