When we bring an ingredient into the kitchen its parts and pieces should be useful. Occasionally we get caught up in the idea of preserving and utilizing everything. We become wasteful in the effort, the time spent, and the end product, which sometimes languishes on pantry shelves for years. We forget the pleasure of simply enjoying the fruit. Great ingredients are meant to be enjoyed, now or later. Asking ourselves what will give us the most useful and pleasurable results on any given day makes all the difference in our approach to cooking and eating.
