I'm embarrassed to admit that I can't remember where I first heard about Granite Ware. When we were living in NH, sloping brownies were a major thing. Admittedly they were caused by the sloping floor in our kitchen, but still, when I heard about these magical baking pans that browned evenly and helped your baked goods rise evenly I immediately checked them out. The fact that Granite Ware looks exactly like the old dutch ovens that I grew up cooking with had me smitten upon first glance. I began with the 11 by 7-inch rectangle baking pan because I was looking for something smaller than the standard 8 by 8-inch baking pans for my brownies. Alex likes them thicker and I have to double most recipes to cook them in the square pans. This required us to give away or throw away a fair number of brownies that we just couldn't finish on our own. I'm happy to say that the smaller sized pan produces bar cookies and rice crispy treats that are exactly the right size and almost exactly the right amount for our small household to enjoy. The Granite Ware does bake things remarkably well, and no, this isn't a sponsored post of any kind. I'm just happy with the pan. It's been in pretty constant use since we got it. It's easy to clean and produces remarkably consistent brownies that are moist and tender from crispy edge to crispy edge, as long as I do my part by spreading the batter evenly in the pan. I am eyeing the large oval covered roasting pans because they so exactly resemble my long lost Dutch ovens but they will probably have to wait until fall. I bet the big one would be perfect for a turkey. For now I will just enjoy small batch baking in my new favorite pan.
