When we don't sell all our tomatoes at American Noodles we look for secondary uses. We have made preserved lemon tomato sauce and eaten a few tomato salads. Last week I took the sun golds and seasoned them with salt and maple vinegar. I let them marinate overnight. The following day I pressed the tomatoes through a fine meshed sieve to extract any further juices. The tomatoes flavored the vinegar and we were gifted a tomato flavored maple vinegar. We then used the flavored vinegar to dress the tomatoes for the tomato salad. An abundance of tomatoes sparked the creation of marinated vegetable vinegar.
