Our thumbprint is as close to a jelly doughnut that we have come. I have wanted to bring the jelly doughnut to our yeasted dough. But I did not want to stuff it inside. We reserve stuffed fillings for our Boston Creams and other pie-centric doughnuts. Today I looked at our fried dough slightly differently. Our doughnut clusters are often described as doughnut flowers. Today I built on that idea by creating a floral disk in our clusters with strawberry rhubarb preserves. The thumbprint cluster has blossomed.
