We were looking in our pantry. There was celery, kohlrabi and apples. After some consideration, I decided to combine them. The three have different flavors with a similar crisp texture. They could be cut up and dressed into a quick relish. The combination of the three would make a condiment with a bright and distinct flavor. The apple is crisp, juicy, sweet, floral and lightly acidic. The celery is herbal, bitter, and succulent. The kohlrabi is hot, heady, crunchy and aromatic. We combined the three in a bowl and dressed them with white balsamic vinegar, salt, espelette pepper and olive oil. We vacuum sealed the mixture to break down the fruits and vegetables and force the flavors to marry more quickly. It was a bright winter combination, which adds texture, sweetness, and complexity to a dish. The relish demonstrated the importance of combining flavors and ingredients to create a greater whole.
