...is frying up the leftovers. I love cooking lunch for one. There are often small amounts of leftovers kicking around that can be turned into very satisfying meals. In this case I used the leftover chickpea aglio olio pasta. I added a healthy does of greens, a dash of hot sauce, and an egg.
In this case, over easy is the way to go, ensuring that the white cooks while the yolk stay runny, and you still get nice crunchy noodle bits. It was not beautiful, it was savory and tasty and fun to eat alone in my kitchen. There were lots of flavors and textures happening in each bite, You'll have to take my word for the fact that the yolk was beautifully runny because once I start eating the camera is down. It was the final flourish, coating the noodles and adding it's rich goodness to the overall party for one.
