I think of a lot of ideas. I think of beets, and pickled beets and even beets and orange. What I have not done is thought about building a delicious cocktail around beets. Thankfully Matt, the beverage director at The Catbird Seat did. He simmered beets in red wine vinegar. He took the liquid and blended it with an Italian orange sparkling soda. He combined the ingredients and poured them over crushed ice, a fabulous necessity in my book. He topped it with an orange peel. The drink was bright, acidic, earthy, floral and crisp. It was a drink I never knew I needed, and now crave.
