We started our foray into the world of hand pulled noodles. The initial takeaway is they are super simple to make, they are immediately engaging, Amaya (and I) loves the process and we need a lot more practice. We served our first run of noodles with an avocado pan sauce: white wine, butter, soy sauce, avocado and Parmigiano Reggiano. The noodles have an amazing chew and luxurious silkiness. The avocado added a rich coating to the noodles. Now begins our need for repetition and refinement.
