I was inspired to revisit sprinkles, thanks to Stella's visit to the doughnut shop. She has made making sprinkles a badge of honor to be hard earned. For my take on sprinkles I looked to our glazes. The spark came from watching Amaya eat a piece of dried glaze off the rack. It behaved like a sprinkle. I made a batch of banana glaze and piped it in thin lines on several parchment paper lined sheet pans. I let the lines dry for 3ish hours. I passed the buck on cutting the dried sticks to Aki. She was not thrilled with me. The cutting of the dried glaze was awkward and yes a bit of a crumbly mess. She used a metal bench scraper to cut the sprinkles on the sheet pans. The sprinkles stuck to the parchment paper and had to be scraped off. It was a little awkward and messy but the sprinkles were delicious. They are definitely worth the effort. They are flavor packed banana bits that allow us to sprinkle flavor where we want it. Here we've sprinkled them on a chocolate glazed doughnut but who knows where they'll turn up next?
