Ingredients change with the day and season. Quality, size, taste and texture fluctuate. These variables while in some cases may seem a roadblock to consistency actually provide vasts stimulation's to a culinary mindset. Every day presents new challenges and thrills in being able to flesh out the most of an ingredient. Similarly, the continuous growth of artisinal producers and farmers allow us to work with ingredients which posses qualities and nuances previously unavailable. It now becomes our challenge to work with these ingredients, from calamansi limes to rich and decadent maple syrup, to realize their true potential.
We are fortunate enough to have relationships with individuals who want to share ideas and newly discovered or recently unearthed antique ingredients. The continuous interaction with ingredients and individuals enables us to realize how to use ingredients. A product which has remained dormant in the back of our mind may be pushed to the for front by being exposed to and interacting with individuals and their ingredients on a daily basis.
