At the end of the day, what does your gut tell you? It is probably our harshest critic. If in the process of cooking something is off, your gut will let you know. Sure I could be just talking taste, flavor etc, a direct reference to the gut; though I also want to mention the gut as litmus paper for what we do in the kitchen. In looking and examining our cooking we must make sure it feels right in our gut. If not, what are we doing? Cooking and the experiences around dining must first make us feel good; if not it will certainly not be the best for diners to experience. It comes down to our gut in more ways than one.
