In order to continue our evolutionary process in the kitchen we must continue to move. Ideally, we are moving forward, continuing to climb. An issue which arises is how to sustain our motion. The answer is we need to harness our energy. Oh, and it has to be absolutely positive energy. Being in a remote location is difficult...we must use that isolation as a means to fine tune ourselves, our food, our philosophy and to define why we cook. Deep inside exists an honest reason for putting up with kitchen conditions, the hours, the stress. The key is discovering what that reason is and make it the driving force.
By unearthing our own mission statement we will then be able to harness the necessary energy to achieve and fulfill it.
