I woke up tired and in a bit of a funk. What am I doing, and where is it going? Sure, we are developing our cuisine that is great and yet I still felt off.
And something turned me around. We are able to Think Fresh. By being small and remote and beyond the constraints of our many peers who may be constricted by big city dining, we are able to cook our way. We have a creative environment where we are able to ask why and then challenge that question. We are fluid. If we make a mistake, we learn and more often than not we choose to repeat the mistake for it leads us in a new direction.
I write about our freedom, but anyone can Think Fresh. As it dawned on me this morning you just have to make the choice to do it.
