I was not planning on writing about clogged thoughts and how a multitude of ideas may congest in the mind, but that was what faced me this morning. In many cases, the flavors may align while the finished dish resembles the hodge podge from where it originated. A fine example of how this looks is a new cheese course we are working on. Its current state of disruption is visible in the Cheese photo album.
I am not sure where the dish is going to go. Sometimes I just need to put the thoughts into motion and let them reside elsewhere. In being able to get some of the ideas moving, even if it is not the direction I originally intended, I am able to free and dislodge other thoughts in order to focus and polish dishes.
