It turns out we served a sparrow in its nest. Actually, we served a light salad with grilled quail, a nice lunch on a warm afternoon. Unfortunately, it turns out our guests are green chile and potato guys. The quail became reminiscent of a sparrow, the lettuce its nest and the gentlemen preferred to eat only cookies. This is really the first time such an occurrence has taken place out here, but the bird had something else to say. We are faced with a duality of purpose. We were hired to produce the most exquisite cuisine possible. Sure, we can make great green chilies and potatoes, but why? Some would say to make the best green chile available. What An Absolutely Fabulous Idea!!! Unfortunately that would then force me to shelve dishes like oyster escabeche with chanterelle mushrooms, vinegar martini and sheep sorrel. A quandary yes, where is Yoda when you need him?
