The phone rang and all I heard was "I have some incredible chicken of the woods mushrooms." Steve Stallard of blis caviar does much more than just make caviar and age maple syrup, he fills his voids by foraging for mushrooms and trying to make 26 hours in a day. When Steve calls and says he has something, I just say send it. We figure out what to do with the product when it arrives. The chicken of the woods are some of the most beautiful and inspiring mushrooms I have seen. There color is extraordinary and the meaty texture and taste is truly decadent. Tonight we are serving them with seared foie gras, though upcoming menus will surely feature these spectacular mushrooms as well.
