We smoke everything we can think of with varying results which inspire our applications. In the past we have used smoked peanuts, though until recently we had not transformed them into a soup. Smoked peanut soup carries the light essence of smoke and the richness of the peanuts without being cloying on the palate. To begin with, we used the smoked peanut soup as a light sauce with seared scallops and butter poached pork. However, I felt the smoked peanut soup could play a larger role in a dish, so we used it to poach oysters to serve with grouper. I enjoyed the application of the soup with the grouper and oysters, though I think in the future I may simply make a seafood stew or oyster pan roast with the peanut soup. To make smoked peanut soup you need: smoked peanut butter, skim milk, apple cider and salt. The peanut butter is made from apple wood smoked peanuts. The rest is simply balancing flavors.
