Today we were able to heat and aerate yogurt to a cloud like consistency. The ethereal consistency of the tangy yogurt holds like soft whipped cream and melts on the palate. The yogurt becomes easy to spread, such that each bite can be dipped and adorned with or without yogurt. Similarly, the lightened yogurt retains its flavor without overwhelming the palate. All in all, it is a versatile application for yogurt, normally neither served hot nor whipped.
