The other day we made a make shift smoker. As it turns out, I cannot go long periods of time without my smoker. Anyway, the smoker consisted of a hotel pan and tin foil, with compressed apple wood shavings for the smoke. My first project was to smoke cicerchia. These were first cooked with garlic and the smoky flavor worked great with the legume. Well, the smoker was still kicking out smoke so I decided to put some potatoes in as well. The potatoes picked up the smoke and were equally tasty. Once the potatoes were cool we stored them away with hopes of using them in the future. We could make home fries, that would be neat, and then it happened. We were talking bread for the events we were doing and a led to b. Aki put together smoked potato bread. In all fairness, I under smoked the first round of potatoes and the smoke flavor was a bit muted in the bread. That is alright for the bread was delicious. Next time the potatoes will just need to smoke a bit longer and then the bread will sing.
