I am sure fennel braised in coffee has been done before. I have had it as a cocktail,--anise and coffee--though I have yet to braise whole fennel bulbs in coffee. Originally my plans were to braise these bulbs in a base of tomato, grilled onion, tamarind, green olive and jalapeno. Yet, as I walked by the coffee pot with fennel in hand I just went for it. The intense coffee and the sweet anise should blend nicely as the coffee penetrates and softens the fennel. Now comes the point where we need to figure out how will use the fennel and the resulting braising liquid.
