Today we unleashed the power of the EVO. This outdoor griddle, cooking vehicle, plancha for the home/professional chef, is quite a nice toy to have in ones culinary arsenal. We have one to work with and we finally got it dusted off and fired up. Let me tell you, it can cook and cook well. It is one giant griddle. I should have used it this morning for the pancakes I was barely able to cook. That is another story though the long and the short of it is it took way too long to cook way too few orders of delicate corn-cottage cheese pancakes. Thankfully our guests were patient or just not super hungry this morning. Either way, I crossed the finish line, just not first.
Back to the super griddle. We used it at lunch to cook scallops, sixteen orders, forty of them all at once. Not bad. Actually, quite good. So, the EVO can cook scallops. Now we need to figure out what else we can do with it.
Today's lunch consisted of the seared scallops, tea smoked apricots stuffed with goat cheese (something we learned about in our cooking class today) along with compressed melon and shaved romaine lettuce.
