We met Josh and Ed on the French Laundry tour at Taste3 this past May. We started chatting and Josh wove a tale of two friends climbing Mt. Rainier who were fed up with the terrible snacks that were available to take with them. They decided to make a better snack themselves. Their products are natural, organic and unusual. They were also in our gift bag for the event. Frankly we probably wouldn't have gotten around to trying the snacks if we hadn't met the creators ourselves. We did a lot of editing in order to meet the airport weight minimums and many of the "gifts" went by the wayside when we departed Napa Valley. In this case we were sufficiently intrigued to take a taste. Honestly my first bite was ambiguous. I wasn't sure if I liked their nuts or not. They were a bit sticky and chewy and not at their best a week and many miles later. After ten minutes had gone by, the bag was empty and I was looking around for more. I did like them, a lot. The flavor combinations are exotic, unusual and addictive. The Ksar has been my favorite thus far, pistachios, pepitas, sesame seeds, figs, honey and harissa are an incredibly seductive combination. We got in a box of samples for the owners here to try and were given a quick thumbs up to stock the cabins with them. They are full of bright flavors and contrasting textures, crunchy and crispy, sweet, spicy, and deeply savory. They are the perfect snack for my day off without a kitchen because they taste great and I don't have to make them myself.
