Our approach to puffed skins started with our notebook and the drawings and has evolved to punching the smoked skin out and stuffing the herb leaf inside and then vacuum sealing the two sides together after a dusting of activa. While our initial skin puffs are small, I am curious to see how large a puff we can make. I am hoping to try some with shaved smoked pork fat stuffed with a thin slice of cheese. Not quite sure if that will work though I have high hopes.
