Sometimes it takes looking at the end result first. We needed a better method for keeping our scallop gnocchi out of the circulator and these baskets just kind of showed up. I was looking for a grate of sorts to separate the gnocchi in the water bath. Instead of finding the grate, I found three pasta baskets which actually allow us to cook and chill smaller amounts of scallop or other protein gnocchi in the water bath. As we cut the gnocchi into the water the baskets allow for the gnocchi to poach while confining them in the small batches we are cooking them in. This way we have better control of the cooking process and a more efficient process as well.
