It has taken some time and a few arguments with humidity and now our rolls of crispy pumpernickel are where we want them. We dry strips of pumpernickel puree in the oven and then roll them into cylinders. We use copper pipes to hold the crisps in shape which we then place in the dehydrator for for a few more hours to get them nice and crispy. We have actually picked up several different sized pipe widths for further shapes and configurations. Now that the pumpernickel is complete we can now move forward with the rest of the dish.
