We did not win the Pacojet, despite our best efforts. Our final dish presented the grilled potato ice cream on a relish of cucumber and hot dog braised potatoes, Asian pear apple and grilled potato crisps along with smoked Steelhead trout roe from Steve.
Thankfully a friend of ours, John Sconzo, was at the event and
was able to capture some incredible pictures of the competition.
And while the finished dish did not win the hearts of all the judges we were really excited with the composition of ingredients, the flavors and the array of textures we presented.
