We have been looking at cheese recently. Consequently we have been looking for condiments to go with the variety of cheeses we have tasted. On one of our forays to the market we came across three types of figs: brown turkey, black mission and sierra green. The three figs with their various colors sparked the idea of a mosaic. And since we were tasting cheeses we felt the Hickory Smoked Chevre we had on hand would act as the ideal mortar for the mosaic of figs. The figs and goat cheese paired well together, though they were not a finished dish on their own. We looked to roasted scallions and aged balsamic vinegar to round out the dish. Finally a fresh grinding of allspice perfumed the figs and goat cheese and accented the allium.
