It has been years since I have been apple picking. Today we
stole away from the city in search of apples for this Saturday's cooking class. Let me tell you, apple picking is really inspirational; especially when you are the only ones in an orchard with over eight varieties to choose from. And pick and choose and taste and enjoy and smile. And what
is really amazing is that while apple picking I thought only of apples. How they taste, how they grow, how they ripen. I experienced sounds and textures and did not think of anything related to cooking. I was absorbed by the apple experience. Now, back home, with bags of apples perfuming the kitchen like Bouley's entryway I can
reflect and think about what is next. What will we do with all these apples? Will they be cooked or shaved, pickled or pureed? A bit of time, a bit of input and plenty of improvising will guide the way.
Though, something is quite alluring about the apple on its own. I guess Eve knew something.
