We have begun work with our newest kitchen appliance, the CVap cooking drawer. We have coveted this piece of equipment for some time, and through good fortune and my belief in the barter system we now have one in our kitchen. Currently we are working through testing a number of cooking processes where we have already have proven results so as to test its ability against our benchmarks. From there, the sky is the limit. Then we shall really be able to see what kind of control and precision we can get with a uniform moist heat environment. Yesterday's test was the onsen egg. The drawer proved just as efficient as using a circulator, though here we could pull put in and pull out hotel pans full of eggs or grab them individually rather than bobbing for eggs in a circulating water bath.
