Pictured here is purple yam ice cream on a bed of purple yam meringue with purple yam milk, pecan zest and minus 8 vinegar. It is our first creation with frozen purple yam and we are loving the ingredient. It may take us a bit more time to unlock all of the possibilities of this vibrant and earthy ingredient and how best to capture its flavors and colors. This multi-textured dish with varying levels of sweetness from the ice cream to the puree is a fun contrast of the different flavors, textures, and colors that can be teased out of the ube, highlighted by the pecans and sweet, tangy minus 8 vinegar.
