is our new favorite piece of equipment. Some thing just make sense. Although we've been aware of them for years we never got around to to purchasing one for ourselves. Mostly because it's something that we associate with high volume and banquet service, neither of which are things that have been a part of our world for some years. At a recent demonstration we watched a chef use on to fill pastry molds and suddenly realized the error of our ways. These funnels are undeniably expensive but oh so worth it in the long run. They are easy to work with, a breeze to clean and they make filling molds of any kind a clean and simple process. Given Alex's propensity for creating various spheres, cubes, and tubes, this is a very good thing. We bought ours at JB Prince ( a discounted floor model pleased my bargain hunting instincts), and they can also be found at most restaurant supply stores for a varying range of prices. Try one and you'll wonder how you survived without it.
