Ideas may be well planned and still when implementing the final dish, failure can appear like an uninvited dinner guest. Last year we were making coffee cavatelli. This year we reformulated the dough and started work on coffee ravioli. The ravioli were to be filled with a muscavado sugar spiked filling and served with celery root soup. We executed each recipe as planned and well, the dish did not come together. The bitter ravioli with the sweet filling were delicious. The coconut spiked celery root soup was also tasty and flavorful, an evolution in our celery root preparations. Unfortunately, the elements did not want to join together as planned. While we could have tweaked and adjusted the elements, we quickly came to a better decision. The coffee ravioli need to be tasted and the celery root soup needs to shine. We now have to create two separate dishes rather than having them compete against each other in one.
